How to brew tea

Earl Grey 

Hot brew 

Pour 300mls of 100°C hot water into 4g tea leaves (2 heaped tea spoon), then wait for 4 minutes before serving.​

Cold brew

Pour 100mls of 100°C hot water into 4g (2 heaped tea spoon) tea leaves, then wait for 4 minutes. After 4 minutes, add one ice cube and 300mls water or add water till top of a bottle.

Stir few times, then put into fridge and wait for a minimum 24 hours and then serve chilled.

Oolong tea 

SUZUKAZE - Lemongrass green tea 

Hot brew

Pour 300mls of 100°C hot water into 5g tea leaves (2.5 heaped tea spoon), then wait for 2 minutes before serving.

Cold brew

Pour 100mls of 100°C hot water into 5g tea leaves (2.5 heaped tea spoon), then wait for 4 minutes. After 4 minutes, add one ice cube and 300mls water or add water till top of a bottle.

Stir few times, then put into fridge and wait for a minimum 12 hours and then serve chilled.

Oolong tea 

KOME HOJI - Rice & Roasted Tea 

Hot Brew 

​Pour 300mls of 100°C hot water into 8g tea leaves (3 heaped tea spoon), then wait for 2 to 3 minutes before serving.

Cold Brew

Pour 100mls of 100°C hot water into 10g tea leaves (3.5 heaped tea spoon), then wait for 4 minutes. After 4 minutes, add one ice cube and 300mls water or add water till top of a bottle.

Stir few times, then put into fridge and wait for a minimum 24 hours and then serve chilled.

Renga - Cacao Hojicha 

Hot Milk tea

Add 4g tea leaves (2 heaped tea spoon) into 200mls of milk in a source pan and bring to a boil. Then, wait for 4 minutes before serving.

 

 

Cold brew

Pour 100mls of 100°C hot water into 4g tea leaves (2 heaped tea spoon), then wait for 4 minutes. After 4 minutes, add 300mls ice water then drop temperature to 20°C.

After it gets to 20°C, remove ice cubes.

Stir few times, then put into fridge and wait for 24 to 48 hours and then serve chilled.

 

Cold Milk tea

  1. Add 4g tea leaves (2 heaped tea spoon) into 200mls of milk in a source pan and bring to a boil.

  2. Wait for 4 minutes, then put into a fridge for cool down before serving.

Matcha Latte

Matcha latte

  1. Prepare 100mls of hot water (80℃).

  2. Add ½ tea spoon of matcha powder to a bowl or mug

  3. Add hot water only 60mls to a bowl or mug

  4. Whisk in a W shape until frothy or whisk with using a handheld milk frother

  5. Add remaining hot water to a bowl and whisk till mixed well

  6. Steam the cold mild with a steaming wand or froth the warmed milk with a handheld milk frother.

  7. Pour the froth milk into the matcha in a bowl or mug.

 

 Iced Matcha latte

  1. Prepare 100mls of hot water (80℃).

  2. Add ½ tea spoon of matcha powder to a bowl or mug

  3. Add hot water only 60mls to a bowl or mug

  4. Whisk in a W shape until frothy or whisk with using a handheld milk frother

  5. Add remaining hot water to a bowl and whisk till mixed well

  6. Transfer matcha to the fridge to chill for few minutes.

  7. Add a heaps of ice to a glass, then pour your choice of milk into the glass (optional; splash of any simple syrup).

  8. Pour matcha into the glass.
